Not all chillies are created equal. The Scoville Heat Unit (SHU) scale is the global
standard for measuring chilli pungency. Bird’s Eye Chilli sourced from Nagaland and select
regions of North East India consistently delivers 100,000+ SHU.
Higher SHU translates to a hotter bite, greater intensity per gram, sharper and cleaner
heat, and a longer-lasting flavour impact. This makes it ideal for bulk applications where
strength and consistency are essential.
Traditionally grown across the hilly terrains of Nagaland and neighbouring North Eastern
states, this small chilli delivers a powerful, quick, and authentic heat trusted by food
manufacturers, spice processors, exporters, and professional kitchens.
Controlled Processing at Our Kalyani Factory
Centralised Handpicking & Grading
All handpicking, cleaning, and grading are carried out exclusively at our Kalyani factory
under controlled conditions. This centralised approach ensures uniform quality across every
bulk lot.
At the factory level, chillies undergo manual handpicking to remove immature or damaged
pods, visual grading for colour, size, and maturity, and separation of premium whole
chillies and grinding-grade material.
Multi-Stage Cleaning Process
Each batch is subjected to a thorough cleaning protocol including removal of dust, field
debris, and foreign matter, followed by manual inspection to eliminate broken or defective
pieces. Careful handling preserves natural pungency and aroma.
Pure, Untreated Chilli
No artificial colour, oil polishing, or chemical preservatives are used. The product remains
100% natural, processed only through physical cleaning and grading.
